Elderflower & Mint Daiquiri

Valentine Warner has come up with a spectacular cocktail that is eminently easy to make, yet tastes better than anything you’ll find at a top-notch bar.

Ingredients
For 1
Small sprig of mint
60ml Bacardi Rum
20ml Belvoir Elderflower cordial
25ml freshly squeezed lime juice (please squeeze with a fork because if it is done on an electric juicer, the cocktail will take on the bitter taste of the pith).

Method
Take a cocktail shaker and drop in 6 cubes of ice, pour in the ingredients and add one sprig of mint. Attach the lid, shake vigorously, pour straight up into a glass.

    For a delicious summer non-alcoholic drink-
    Elderflower presse, two parts
    one part lemonade
    one part crushed ice
    torn mint leaves,
    add small bit size pieces of cut up apple, strawberries and slices of cucumber. Stir and serve in long glasses!
