Cinnamon & Spiced Winter Berries Ice-cream

Cinnamon & Spiced Winter Berries


 

Ingredients

Belvoir Fruit FarmHalf a pint of double cream
Belvoir Fruit Farm 160ml Belvoir Spiced Winter Berries Cordial
Belvoir Fruit Farm 100g of Cinnamon spiced biscuits such as wafer thin Speculaas biscuits often served with coffee (or Tesco's Finest Cinnamon & Apple Thins)

Method

  1. Whip the cream to a floppy custard-like consistency.
  2. Stir in the cordial. You will notice that the mixture thickens considerably.
  3. Crush the biscuits with your hands letting the crumbs and pieces fall into the mixture.
  4. Stir lightly.
  5. Spoon mixture into individual bowls or one large bowl and freeze overnight.

Notes:

  • This is a more sophisticated version of the Blackcurrant Meringue Ice-cream and the great thing is that you don't need to stir the mixture part-way through freezing.
  • If you don't have individual moulds, buy the plastic jelly moulds from any supermarket. They freeze very well in these and are easy to turn out.
