Elderflower & Lime Cheesecake

Ingredients

Belvoir Fruit Farm3/4 large pack Digestive biscuits
Belvoir Fruit Farm90g butter
Belvoir Fruit Farm60g sugar
Belvoir Fruit Farm360g full fat cream cheese
Belvoir Fruit Farm160ml double cream, lightly whipped
Belvoir Fruit Farmicing sugar, to taste
Belvoir Fruit Farm1 lime
Belvoir Fruit FarmZest of 1 lemon
Belvoir Fruit Farm2 tbs Belvoir Elderflower Cordial

Method

  1. Place the digestive biscuits in a large plastic bag and using a rolling pin, crush until they resemble fine bread crumbs.
  2. Melt the butter in a large saucepan and add the crushed biscuits and sugar until they are fully combined.
  3. Press the biscuit mixture firmly into a 8" round tin with a lift up base and place in the fridge to set.
  4. Wash the lemon and grate the skin using a fine grater or a use a lemon zester.
  5. Place this zest together with the cream cheese, icing sugar and lime juice in a food processor and mix well.
  6. Then slowly add the cream and elderflower cordial until it is a smooth thick paste.
  7. Spread this mixture on the biscuit base and refridgerate.
  8. Just before serving, sprinkle the cheesecake with the zest of the lime and place twisted slices of lime around the edges.

Notes:

  • Try varying the flavour of the cheesecake mixture by using other flavoured cordials and using different decorative fruits.
