Orange & Cranberry Tart

(Enough to fill an 8 inch/20 cm diameter pastry case)

Ingredients

Belvoir Fruit FarmJuice and finely grated zest of 2 large oranges
Belvoir Fruit Farm 100ml Belvoir Cranberry Cordial
Belvoir Fruit Farm 50g caster sugar
Belvoir Fruit Farm 2 whole eggs
Belvoir Fruit Farm 4 egg yolks
Belvoir Fruit Farm 100g unsalted butter

 

Method

  1. Put all the ingredients except the butter in a saucepan and over a low heat stir until the sugar has dissolved.
  2. Add the butter and whisk until the mixture thickens.
  3. Leave it to cool a bit.
  4. Pour into the pastry case and leave to set in the fridge overnight.

Notes:

  • The colour of the custard is a rusty orange and you can either use a blow torch to give a brulèe effect or simply scatter sieved icing sugar on to it before serving. This is delicious served with crème fraiche.
  • This is a tart tart and a twist on the classic lemon tart that is so popular!
  • Either buy a ready-made pastry case or make your own.
