Apple, Elderflower & Cinnamon Pudding

Apple, Elderflower & Cinnamon Pudding


  • 1 kg apples, washed, no peel and sliced into cubes
  • Juice of 1/2 lemon
  • 100 g sugar
  • 2 tsp Belvoir Elderflower Cordial
  • 60 g raisins
  • 1 tbsp corn flour
  • For the topping:
  • 60 g oat
  • 60 g flour
  • 1/2 tsp cinnamon
  • 90 g olive oil
  • 90 g demerara sugar
  • 60 g oat flakes


  1. Put the cubed apples, the lemon juice, the elderflower cordial, the sugar, the raisins and 5 tbsp of water to boil. Boil for 10 minutes or until the apples become soft.
  2. Meanwhile, stir the corn flour with 1 tbsp of water and put everything over the apples. Boil until the entire composition thickens and then pour everything into a heat resistant dish.
  3. Put the rest of the flour, the oil and the cinnamon in a blender and mix. Put everything in a bowl, add sugar and the oat flakes and stir together. Put the composition over the apples in the heat resistant dish.
  4. Oven bake for approximately 30 minutes, or until golden brown.
  5. Serve with ice cream and enjoy… Mmm, lovely!
