Belvoir Prawn Cocktail with Ginger and Lime


  • 200 g peeled tiger prawns
  • 500ml Belvoir Ginger Beer
  • 2 limes
  • 10 g chopped garlic
  • 20g chopped coriander
  • 1 head baby gem lettuce
  • 1 chopped green chilli
  • Fried corn tortilla for garnish


  1. Bring the Ginger Beer and salt to the boil, add the prawns and remove from the heat.
  2. Strain the prawns from the ginger beer after 10 minutes and put in the fridge to cool down.
  3. Juice the 2 limes, add the chilli, chopped garlic and coriander to make a dressing.
  4. Mix the prawns and the dressing 30 minutes before serving.
  5. Season with salt and maybe a pinch of sugar.
  6. Wash the lettuce, save 4 whole leaves and chop the inner part of the head.

To assemble the dish, place the chopped lettuce in the bottom of 4 martini glasses and place the 4 leaves along the edges of the glasses. Place the prawns on top of the lettuce and drizzle the remaining dressing over the prawns. Garnish with a few fried tortilla chips – devour!
