There’s much more to food and drink pairing than just wine, and our drinks make a wonderful match with many a meal. We have worked with Gill Meller – food writer and head chef at River Cottage – to find the best food pairings for our Pressés and Cordials, taking into consideration things like acidity and sweetness, to make sure that both parts of a meal bring out the best in each other.

Tasting notes

As well as recommending a specific dish to match each of our drinks, Gill has suggested perfect drinks pairings for the five broader flavour profiles:

Bitter

Belvoir’s Cox Apple Pressé is the perfect foil for dishes with an acidic or bitter undertone – perhaps with dark chocolate or leafy greens. Naturally sweet, gently fizzy and with a cool, rounded flavour – it’s the ideal partner for sharper, tarter flavours.

Sweet

With something a little sweet, it’s best to go for drinks with a contrasting flavour. Belvoir’s Freshly Squeezed Lemonade is the go-to drink here, cutting through sugary, honeyed flavours and complementing with a tang.

Sweet

Sour

Dishes that are heavily flavoured with lemon, tomato or anything sour pair perfectly with Belvoir’s Blueberry & Blackcurrant Cordial. Its deep fruitiness gives it a wonderfully rounded palette of flavours that wraps around tangy and sour flavours, softening them beautifully.

Food pairings

Elderflower Pressé / Cordial

I love serving this delicate, floral pressé with grilled or pan-roasted fish. It’s particularly good with wild sea bass, especially when cooked with a little fresh thyme. The heady, lemony edge and gentle fizz also make it an incredible accompaniment to young cheeses, particularly soft creamy goat’s cheeses.

Lime & Lemongrass Pressé / Cordial

This fruity pressé/ cordial is bursting with charm, warmth and character. It’s laced with sharp, zesty notes from the lime, which make it a perfect counterpoint to rich roasts and slow, low braises. Try it with spiced pork belly that’s been gently cooked for hours with garlic, anise and chilli. The lemongrass adds a further citrussy note that marries well with fragrant green curries and piquant noodle dishes.

Raspberry Lemonade / Cordial

Raspberry pink, like bottled summer, this deeply scented, cool berry lemonade (also available as a Raspberry & Lemon Cordial) makes the ideal partner to fish and shellfish. Serve it over ice alongside delicate fish or crab cakes. It’s also stunning with good quality pork sausages, the acidity from the lemon cutting their richness perfectly.

Raspberry Lemonade / Cordial

Ginger Beer / Cordial

This surprising infusion takes the fiery, zesty qualities of fresh root ginger to a new level. There are note of honey and lemon in here too and I think this lovely blend is perfectly matched to dark sticky pork ribs or warm, sweet, honey and mustard-baked gammons.

Enjoy on the go too: Invigorate yourself with this sparkling Ginger Beer; It’s unlike anything you’ve tried before. Fiery with fresh root ginger, and fruity with zesty lemon. Drink on the go, with roast beef and horseradish sandwiches or ham and mustard baguettes.

Elderflower & Rose Pressé / Cordial

The soft scent of rose always conjures up an air of the Mediterranean for me. It has a natural affinity with elderflower and these combined perfumes work amazingly with grilled or roast lamb, particularly if charred with apricots or cooked slowly with a good fruity red wine.

Blueberry & Blackcurrant Cordial

A sumptuous and deeply fruity cordial, this is perfect served over ice as a refreshing accompaniment to light lunches and suppers. Try with a tomato, goat’s cheese and rosemary tart or with warm lemon and rosemary-roast chicken.

Freshly Squeezed Lemonade

The flavour of this lemonade is so traditional and authentic – it takes you straight back to English fetes and summer picnics. Unsurprisingly, it works really well with foods that are accentuated by the zing of fresh lemon such as proper fish and chips or crisp, whole-tail scampi. It is also the go to drink to serve with anything with real sweetness; the fresh lemons cut sugary, honeyed flavours in the most complementary of ways.

Enjoy on the go too: This gorgeous lemonade will refresh and enliven. It’s bursting with citrus and incredibly thirst quenching. It’s an ideal accompaniment to another of our English staples, smoked salmon and cream cheese sandwiches.

Freshly Squeezed Lemonade

Cox Apple Pressé

An extremely refreshing apple pressé, with a mellow complexity and subtle fizz, this manages to capture the true smoky essence of fresh cox apples. Serve it as you might a cool, appley cider: with a good burger, a smoky hotdog or some tender pulled pork and apple sauce. It is also an ideal accompaniment to anything with a bitter or acidic note due to its naturally sweet, gently fizzy, rounded flavour being the perfect foil to sharper, tarter flavours.

Enjoy on the go too: Apples have a natural affinity with pork; so enjoy with a good BLT or perhaps, a proper ham and cheese sandwich – how very English!

Cucumber & Mint Pressé

In this fresh, clean, classy pressé, the calm notes of the cucumber play wonderfully against the mint’s coolness. Pour tall over ice and serve as a sensational accompaniment to delicate poached salmon or trout. Alternatively, sip it while enjoying a real prawn cocktail or some dressed fresh crab.

Belvoir Shiraz without the hangover

An exceptional alternative to a traditional Shiraz, this has all the hallmarks of the fruity red wine – without the hangover. Blackcurrant gives acidity, elderberry contributes tone and tannin and a ripe sweetness comes from the Shiraz grape itself. All these qualities, as well as its peppery undertow, make this the perfect partner for chargrilled steaks or a flaky pastry-topped, rich steak pie.

Citrus Chardonnay Pressé

A golden chardonnay-style bubbly, this fizzes with character. Notes of sharp lemon give it a welcome acidity while the aroma of sweet melon rounds out those edges beautifully. A hint of lemon thyme aligns this fizz seamlessly with an array of food: it comes into its own served alongside buttery grilled fish, roast chicken or something sweet such as a lemon tart or summer berry pavlova.

Chardonnay without the hangover

Rounded, earthy and full of fruit, this non-alcoholic wine has all the characteristics of a chardonnay but with its roots entwined firmly in the English terroir. Hints of elderflower and summer peaches compliment the white grapes perfectly making it an excellent partner for grilled fish, crab and prawns.
